Pumpkin Spice Pancakes
These pumpkin spice pancakes are a breeze with a little pre-assembly! Throw all the dry ingredients together in a gallon size food storage bag ahead of time. When you’re ready for pumpkin spice pancakes (and when are we not?), pour the bag’s contents into a mixing and add the remaining (few) wet ingredients. Whisk well and pour onto a hot griddle. Let’s go!
Dry Ingredients
In a gallon size bag or mixing bowl, combine:
- 2 cups all purpose flour
- 3 Tbs brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 2 heaping tsp pumpkin pie spice
- ½ tsp salt
Wet Ingredients
When it’s pancake makin’ day, add these ingredients to the pre-mixed dry ingredients:
- 1 ½ cups milk
- 1 cup canned pumpkin
- 1 egg
- 2 Tbs vegetable oil
- 2 Tbs vinegar
That vinegar isn’t a typo! The canned pumpkin creates a much denser batter and pancake, and the vinegar creates a fantastic reaction with the dry ingredients to help fluff it back up some.
Whisk all ingredients together very well and pour onto a hot griddle in pancake sized puddles. You’ll want to cook each side until it’s dark golden brown, but remember that the canned pumpkin is going to darken the color of the batter – so it may not be totally done even if it looks it. Give it some patience and you’ll be set. Serve with butter, maple syrup, and some chopped pecans for some extra flair.
Pumpkin Spice Coffee
The secret to pumpkin spice coffee? Pumpkin pie spice! Seriously, this couldn’t be easier. Here’s what you’ll need:
Ingredients:
- Regular coffee grounds
- Pumpkin pie spice
You’re going to want to measure a half-teaspoon of pumpkin pie spice per 6oz cup of coffee. When you measure off the coffee grounds into the filter, simply add that pumpkin pie spice on top of it before running the hot water through. A splash of half and half will make this iconic treat a pure delight!
